Ingredients
- 2 tablespoonos extra-virgin olive oil
- 1 pound carrots washed and peeled
- 1 teaspoon Kosher salt
- 1 teaspoon Coarse Ground Pepper

Instructions
- Place the carrot slices into a large bowl. Add the olive oil and mix with a spoon until evenly covered. Add the salt and pepper and mix again until evenly covered.
- Spread the carrots onto a prepared baking sheet (sprayed with olive oil) and bake in a 400 degree oven for 40 minutes or until tender and well toasted. Turn halfway through cooking.
- Transfer to a platter in a single layer and serve warm or room temperature. I love to serve with a lemon butter or ranch dressing as a side dip.
